MDH Sambar Masala is a spice blend for South Indian curry made with lentils and vegetables. Made with coriander, cinnamon, fenugreek seeds, cumin and other savory ingredients.

This tangy and savoury dish dates it’s origin to the 17th century, it was accidentally prepared in the kingdom of Maratha ruler Sambhaji. He tried to prepare dal in the absence of his chef and added tamarind for a tangy taste. The dish later came to be known as sambar. Sambar originated in Karnataka and is a very popular dish in South India and Sri Lanka.

Sambar is a lentil-based vegetable made in dal (lentils) and tamarind broth. One can use a variety of vegetables such as okra, eggplant, potatoes, tomatoes, drumstick, carrots and pumpkin to prepare sambar. This protein-rich and nutrient-dense diet is traditionally served with Idli, Vada, Dosa, Uttapam, Appam and even rice. It can also be combined with bread, roti, naan, quinoa or brown rice.

MDH Recipe: Sambar
1. Wash and dress 500g vegetables like eggplant, drumsticks, marrow, potatoes, peas, cauliflower, etc.
2. Boil 200g toor dal in 800ml water for 40 minutes. Retain water.
3. Soak 50g tamarind in 100ml warm water for 30 minutes and extract the pulp. Sieve and transfer to the boiled dal.
4. Separately fry 100g coarsely chopped red onions with 100g chopped tomatoes.
5. Add the vegetables, 20g Sambar Masala, salt and stir fry for 5 minutes.
6. Transfer boiled dal along with water and simmer for 20 minutes.

Product Weight: 100 Grams (3.5 OZ) Storage Instructions: Keep in Cool & Dry Place Package: Box Meat Curry Masala Ingredients Ginger 15 gm Garlic 6 cloves Almond 15 gm (boiled & skinned) Coconut Powder 15 gm Oil 50 gm Onion 100 gm (chopped) Meat Curry Masala 20 gm Yogurt 120 gm Tomato Puree 60 gm Mutton 700 gm Direction 1. Grind ginger, garlic, almonds, coconut powder and little water to form paste in a grinder. 2. In a pan, heat oil and fry onions in it till light golden. 3. Add the paste in it & fry for 5 minutes. 4. Then add Meat curry masala and fry further for 2 min. 5. Add natural yogurt pouring little quantity at a time. 6. Add tomato puree, & salt to taste. 7. Stir for 3-4 min. 8. In a flat pan heat 50g edible oil and cook chicken pieces & onion paste till light pink for 10 min. Add tomatoes, almonds paste & 15g Butter Chicken masala. Add water.
